Houston Outlaws Popsicles

Ingredients

Popsicles

  • 1 13.5 oz can of coconut cream
  • 1/2 cup maple syrup
  • 1 tsp salt
  • 3/4 cup lime juice
  • 2 tbsp lime zest
  • 8 drops of neon green food dye

Dark Chocolate

  • 1/2 cup dark chocolate chips
  • 1 tbsp coconut oil

Other

  • green star sprinkles
  • white star sprinkles

Instructions

  • Combine the coconut cream, maple syrup, salt, lime juice, and lime zest in a blender. Blend until completely smooth and well combined.
  • Add the green food dye and mix well. 
  • Transfer the mixture into your popsicle molds. Place the popsicle sticks in, cover, and place in the freezer overnight (at least 12 hours).
  • The next day, place the chocolate in a bowl and add the coconut oil. Place in the microwave and heat up until it melts. Make sure to stir everything together. Set aside and allow to slightly cool.
  • Set a plate with parchment paper on the side. Remove the popsicles from their molds. 
  • Take the popsicles and drizzle a portion of the dark chocolate on them and sprinkle a few green and white star sprinkles. The chocolate should solidify pretty quickly. Once set, place on the plate with parchment paper. 
  • Enjoy immediately or wrap each popsicle in plastic to store in the freezer to enjoy later.
