Shanghai Dragons Popsicles

Ingredients

Popsicle

  • 12 ounces strawberry
  • 1 tsp lemon juice
  • 1 cup greek yogurt
  • 1/4 cup honey
  • 1/2 vanilla bean seeds scraped

Dark Chocolate

  • 1 cup dark chocolate chips
  • 2 tbsp coconut oil

Garnish

  • red circle sprinkles
  • yellow circle sprinkles

Instructions

  • Combine the strawberry, lemon juice, greek yogurt, honey, and vanilla bean seeds. Blend until completely smooth and well combined.
  • Add the red food dye and mix well. 
  • Transfer the mixture into your popsicle molds. Place the popsicle sticks in, cover, and place in the freezer overnight (at least 12 hours).
  • The next day, place the chocolate in a bowl and add the coconut oil. Place in the microwave and heat up until it melts. Make sure to stir everything together. Set aside and allow to slightly cool.
  • Set a plate with parchment paper on the side. Remove a popsicle from its mold. Dip the popsicle into the melted chocolate. Sprinkle with orange zest before the chocolate completely solidifies. 
  • Once the chocolate sets, place on the plate with parchment paper. Enjoy immediately or wrap each popsicle in plastic to store in the freezer to enjoy later.
