Dallas Fuel Popsicles

Ingredients

Blueberry/ Raspberry Popsicle

  • 1 cup blueberries
  • 1/2 cup raspberries
  • 1 1/4 cup plain greek yogurt
  • 2 tbsp honey
  • 8 drops blue food dye

Blue White Chocolate

  • 1/2 cup white chocolate chips
  • 1 tbsp coconut oil
  • blue food dye

Instructions

  • Combine the blueberries, raspberries, greek yogurt, and honey. Blend until completely smooth and well combined. Add the blue food dye and mix well. 
  • Transfer the mixture into your popsicle molds. Place the popsicle sticks in, cover, and place in the freezer overnight (at least 12 hours).
  • The next day, place the chocolate in a bowl and add the coconut oil. Place in the microwave and heat up until the chocolate melts. Add the blue food coloring and stir to match the Fuel’s colors. Make sure to stir everything together. Set aside and allow to slightly cool.
  • Set a plate with parchment paper on the side. Remove the popsicles from their mold. Take the popsicles and drizzle the chocolate on them. The chocolate should solidify pretty quickly. Once set, place on the plate with parchment paper. Enjoy immediately or wrap each popsicle in plastic to store in the freezer to enjoy later.
