London Spitfire Popsicles

Ingredients

Popsicle

  • 1 cup heavy cream
  • 1 1/2 cups plain greek yogurt
  • 2 tbsp vanilla extract
  • 2/3 cup sugar
  • 3/4 tsp cardamom
  • neon blue food dye

Dark Chocolate Drizzle

  • 1/2 cup dark chocolate chips
  • 1 tbsp coconut oil

Additionals

  • white, orange, and light blue sprinkles

Instructions

  • Combine the heavy cream, yogurt, vanilla extract, sugar, and cardamom in a blender. Blend until completely smooth and well combined. Add a few drops of neon blue food dye and mix well. Add enough dye to match the Spitfire blue.
  • Transfer the mixture into your popsicle molds. Place the popsicle sticks in, cover, and place in the freezer overnight (at least 12 hours).
  • The next day, place the chocolate in a bowl and add the coconut oil. Place in the microwave and heat up until the chocolate melts. Set aside and allow to slightly cool.
  • Set a plate with parchment paper on the side. Remove the popsicles from their molds. Take the popsicles and drizzle the chocolate on them. Quickly add the sprinkles, the chocolate should solidify pretty quickly.
  • Once set, place on the plate with parchment paper. Enjoy immediately or wrap each popsicle in plastic to store in the freezer to enjoy later.
