Rice Pudding

Servings: 2 Bowls

Ingredients

  • 1/2 cup white rice
  • 2 cups whole milk
  • 1 tsp salt
  • 3 tbsp sugar
  • 1 cinnamon stick
  • 1/2 vanilla bean, split in half and scrapped
  • 1 strip of orange peel
  • 2 strips of lime peel
  • 1 tbsp butter
  • 1 tbsp honey

Instructions

  • Combine the rice, milk, cinnamon, vanilla bean (pod and seeds), salt, sugar, orange peel, and lime peel in a saucepan over medium high heat. Bring to a boil. Once it begins to boil, reduce the heat to medium-low and cover.
  • Simmer for 30 minutes, until the rice is cooked and most of the liquid is evaporated. Make sure to stir frequently during the cooking time so the rice doesn’t stick to the bottom of the pan. 
  • Remove the rice from the heat. Remove the cinnamon stick, vanilla bean pod, orange peel, and lime peel. Stir in the butter and honey. Serve hot or refrigerate and serve cold - both are delicious options.
