Cranberry & Macadamia Nut Oatmeal Cookies

Ingredients

  • ½ cup brown sugar
  • 1 cup sugar
  • 1 cup unsalted butter room temperature
  • cup maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 2 ⅓ cups all-purpose flour
  • 3 cups rolled oats
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • 1 ¼ cup white chocolate chips
  • 1 cup dried cranberries
  • ¾ cup macadamia nuts

Instructions

  • Preheat oven to 325°F. Place macadamia nuts on a baking sheet and bake for 15 minutes, or until golden brown. Set aside to cool. Combine the flour, oats, baking powder, and salt in a bowl.
  • In another bowl, place the butter and mix until smooth. Add the sugars to the butter and mix until smooth. Add the maple syrup, egg, vanilla extract, and almond extract.
  • Slowly mix in the flour mixture until it just comes together. Add the white chocolate chips, dried cranberries, and macadamia nuts and fold until mixed well.
  • Take about 2 tablespoons of the dough at a time, place on a baking sheet and press down slightly into a cookie shape. Place in the refrigerator for 30 minutes. Preheat oven to 350°F. Place in the oven to bake for 16-19 minutes. Makes about 30 cookies.
