Maple Salmon

Ingredients

Salmon

  • 1 lb 454 g salmon, skin on and cut into 4 portions
  • ¾ cup 225 g maple syrup
  • 3 tbsp 45 ml soy sauce
  • ¼ cup 59 ml mirin
  • 2 tbsp 30 ml sake
  • 4 garlic cloves minced
  • 1 inch piece of ginger grated

Green Beans

  • 1 ½ lb 680 g green beans
  • 15 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • salt
  • pepper

Instructions

  • Combine the maple syrup, soy sauce, mirin, sake, garlic, and ginger in a bowl. Add the salmon and let rest in the refrigerator for at least 2 hours, up to 8 hours.
  • Preheat your oven to 400°F. Prepare a baking tray with aluminum foil and nonstick spray. Place the salmon on a baking sheet and bake for 16 to 18 minutes.
  • Place the green beans and garlic in a bowl and toss to coat with olive oil and maple syrup. Prepare a baking tray with aluminum foil and parchment paper. Place the green beans on the baking sheet. Season with salt and pepper. This can be baked at the same time as the salmon for 16 to 18 minutes, or until tender.
