Combine sugar, honey, and water in a saucepan and place over medium-high heat. Mix together and bring to a simmer. Once the sugar and honey dissolves, remove from the heat to cool.

Transfer to an airtight container. Can be stored in the refrigerators for up to 2 weeks.

In a large pitcher, combine the lemon juice and water. Place in the refrigerator to chill overnight. Can be stored in the refrigerators for up to a week.

At this point, you can combine the lemon mixture with the simple syrup if you’d like. Taste as you add the syrup to your preferred sweetness level. This is my preferred level of syrup to lemon.

If you’d like to keep things separated, Add 1 to 3 tablespoons of the simple syrup to a cup. Pour in the lemon mixture and mix together. Test and adjust the sweetness level to your liking. Serve with ice and a lemon slice.
