Octodad: Dadliest Catch was recently announced for a WiiU and Xbox One release. More people will be able to experience the ridiculousness that is Octodad and that makes me happy. It is exciting to see a game that several friends created do so well. With the announcement of more console releases I felt it was time to do another recipe from the game. This week we will be making some donuts that can be found in Octodad’s kitchen. After examining the donuts I decided they were a chocolate cake donut with vanilla frosting. I wanted to go with something completely different from the other donuts I’ve made so these are much more cakelike.
Required Equipment: bowls, mixer, donut baking pan, whisk
Ingredients:
Dough
– 2 cups flour
– 2 tsp baking powder
– ½ tsp salt
– ½ cup cocoa powder
– 1 cup sugar
– 1 tsp vanilla extract
– 2 eggs
– 1 cup almond milk
Frosting
– ½ vanilla bean, scrapped
– 1 ½ cup powdered sugar
– ¼ tsp salt
– ½ tsp vanilla extract
– ¼ cup butter, melted
– 1 tbsp cream cheese
– heavy cream
Preheat an oven to 350°F. In a small bowl combine the flour, baking powder, salt, cocoa powder and sugar.
Using your stand mixer, mix together the eggs and vanilla extract. Add half of the almond milk and mix.
Add half of the flour mixture to the stand mixer. Next, add the remaining almond milk to the mixer. Pour in the last half of the flour and mix until everything is fully incorporated.
To transfer the batter to the donut baking sheet, place it a plastic ziplock bag. Cut a small hole off one of the corners of the ziplock bag and squeeze to fill the donut pan. Place inside the oven and bake for 10 minutes. Remove the donuts from the pan and allow them to fully cool.
To make the frosting, combine the melted butter, cream cheese and scraped vanilla bean.
Add the powdered sugar and whisk together. If the frosting is too thick, add 1 tbsp at a time of heavy cream until it reaches a desired consistency. If the frosting gets too thin, add more powdered sugar to thicken it. I went with a slightly thicker frosting for mine. Finally, frost your donuts and enjoy!
