The Shin Megami Tensei franchise is one of my all time favorites. I didn’t delve into these game until Persona 3 several years back, but since then I’ve played many of them and have enjoyed them all. My personal favorite has to be Persona 4. My husband and I even named our corgi after Kanji from Persona 4. That should tell you how much we both love that game. Atlus does a really good job of developing a story that I just get really into. I’m really excited for the release of Persona 5 (hopefully sometime this year) and can not wait to see what else Atlus has up its sleeves.
It is getting REALLY hot down here in Texas and the fact that the AC in my apartment can’t keep up is making me miserable. To combat the heat I decided to make a cool treat to munch on. What could be better than a topsicle from Persona 4? A topsicle is a unique kind of popsicle that is completely vegan and uses tofu in the mix. It may sound strange but the tofu works really well in these frozen snacks. To keep the topsicles vegan, I went with an almond flavor by using almond milk and enhancing it with almond extract. Almond extract has a really strong taste so be cautious with how much you put into the recipe. This recipe is easy and perfect for the summer heat.
Required Equipment: plate, blender, popsicle mold
Ingredients:
10 oz firm tofu
1 cup almond milk
1 tsp almond extract
½ cup sugar
Mash the tofu. Place the tofu and almond milk in a blender and blend until smooth.
Add the sugar and almond extract and blend until combined. Carefully fill your popsicle mold with the topsicle liquid. Freeze until they have hardened. Enjoy!

Cool! I like that you used almond milk and flavoring. I made some topsicles a while ago but did fruit with juice. I think the nut milk would be excellent though!
