Seoul Dynasty Popsicles

Ingredients

Popsicles

  • 2 bananas
  • 3/4 cup peanut butter
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 10 drops yellow food dye *
  • 1/2 drop blue food dye *
  • 1 drop brown food dye *

Dark Chocolate

  • 1/2 cup dark chocolate chips
  • 1 tbsp coconut oil

White Chocolate

  • 1/2 cup white chocolate chips
  • 1 tbsp coconut oil

Instructions

  • In a blender, blend the bananas until smooth. Add the peanut butter, heavy cream, vanilla extract, and salt. Blend until completely combined and smooth. If you are using food dye, add it and mix again.
  • Transfer the mixture into your popsicle mold. If the mixture seems to be a little gritty or separated, use a skewer stick and stir in the mold. Cover and place in the freezer overnight (at least 12 hours).
  • The next day, place the chocolates in two bowls and add the coconut oil. Place each in the microwave and heat up until it melts. Make sure to stir everything together. Set aside and allow to slightly cool.
  • Set a plate with parchment paper on the side. Remove the popsicles from their mold. Take the popsicles and drizzle a portion of the white chocolate and dark chocolate on them. The chocolate should solidify pretty quickly. Once set, place on the plate with parchment paper. Enjoy immediately or wrap each popsicle in plastic to store in the freezer to enjoy later.

Notes

*Food dye is optional. I used the dye to match the Seoul Dynasty’s colors as closely as possible. Make sure to introduce the food coloring slowly because your totals might be slightly different from mine.
