Ingredients

Bacon Jam

  • 3/4 lb bacon
  • 2 shallots finely diced
  • 2 garlic cloves finely diced
  • 3 tbsp brown sugar
  • 1/2 cup maple syrup
  • 2 tbsp apple cider vinegar
  • 1 tsp pepper
  • 1/2 cup bourbon

Sauce

  • 1/4 cup + 2 tbsp mayo
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp fennel
  • salt
  • pepper

Sauteed Mushroom and Onions - Enough for 2 burgers

  • 3 button mushrooms stems removed and sliced
  • 1/4 onion sliced
  • 1 tbsp canola oil

Burger Patties (per burger)

  • 3 - 1/4 lb beef patties
  • garlic powder
  • salt
  • pepper
  • canola oil
  • 2 slices of cheddar cheese
  • 2 slices of prosciutto

Burger Assembly

  • sesame seed bun
  • 1 tbsp butter melted
  • 2 tsp pepper
  • 1 tsp garlic powder
  • lettuce
  • slices of pickles

Instructions

Bacon Jam

  • Cook the bacon in a large frying pan. Do not overcrowd the pan. Once the bacon is cooked, transfer to a paper towel on a plate and set aside. You will have to do this in a few batches.
  • In the same pan, remove all but about 1 tablespoon of bacon fat. Saute the shallots and garlic until just softened, about 3 minutes. Crumble in the bacon and stir everything together. 
  • Add the brown sugar, maple syrup, apple cider, pepper, and bourbon. Bring to a boil. Reduce the heat to medium-low and allow to simmer for 30 minutes.
  • Place in a sealable container and put in the refrigerator until you are ready to assemble the burger. The jam will be good in the refrigerator for up to 2 weeks.

Sauce

  • Whisk together all of the ingredients for the sauce in a small bowl. Taste and season with salt and pepper to your liking. Place in a sealable container and put in the refrigerator until you are ready to assemble the burger. The sauce will be good in the refrigerator for up to 2 weeks.

Sauteed Mushroom and Onions - Enough for 2 burgers

  • Heat a frying pan over medium-high heat. Add the vegetable oil and allow to heat up. Add the mushrooms and onion. Saute until the vegetables crisp to your liking.

Burger Patties (per burger)

  • Season each of the hamburger patties with salt, pepper, and garlic powder. Heat a pan over medium-high heat. Once heated, add 2 teaspoons of canola oil.
  • Place the patty in the pan and allow it to cook. Feel free to flip and press as much as you want. Cook the patties to 145℉.
  • Remove 1 of the patties and set aside on a plate with a paper towel. Place the prosciutto on one of the patties. Top both patties with a slice of cheddar cheese on and cover with a lid. Cook until the cheese melts, about 1 minute. Transfer to the plate with the other patties.

Burger Assembly

  • Combine the melted butter, pepper, and garlic powder. Slice the bun in half and place on a baking sheet. Brush the inside of each of the buns with the seasoned butter. Place under the broiler and toast until the bun has crisped up.
  • To assemble the burger, place the bottom bun on a plate. Generously spread the sauce on the bun. Add a few slices of pickles and top with lettuce.
  • Place the patty with the cheddar cheese. Next, add the sauteed mushrooms and onions.
  • Add the burger patty with the prosciutto and cheese. Top with the last patty. Scoop a portion of bacon jam on top of the patty.
  • Add additional lettuce. Smear a generous helping of the sauce on the top bun and place on top.
