Cook the bacon in a large frying pan. Do not overcrowd the pan. Once the bacon is cooked, transfer to a paper towel on a plate and set aside. You will have to do this in a few batches.
In the same pan, remove all but about 1 tablespoon of bacon fat. Saute the shallots and garlic until just softened, about 3 minutes. Crumble in the bacon and stir everything together.
Add the brown sugar, maple syrup, apple cider, pepper, and bourbon. Bring to a boil. Reduce the heat to medium-low and allow to simmer for 30 minutes.
Place in a sealable container and put in the refrigerator until you are ready to assemble the burger. The jam will be good in the refrigerator for up to 2 weeks.
