Los Angeles Gladiators Popsicles

Ingredients

Grape Layer

  • 1 cup plain greek yogurt
  • 1/4 cup grape jam
  • 2 tbsp honey
  • 8 drops of pink food dye
  • 3 drops of blue food dye
  • 2 drops of red food dye

Vanilla Layer

  • 3/4 cup plain greek yogurt
  • 1/2 vanilla bean seeds scraped
  • 1/3 cup heavy cream
  • 2 tbsp honey
  • 2 tsp vanilla extract

Instructions

  • Combine the greek yogurt, grape jam, and honey. Blend until completely smooth and well combined. Add the food dye and mix until the purple resembles the Gladiators purple.
  • Transfer about half of the mixture into your popsicle molds and fill each 1/3rd of the way up. Place in the freeze (no sticks) for 30 minutes. Place the remaining filling in the refrigerator while you work on the second layer.
  • For the second layer, combine the greek yogurt, vanilla bean, and vanilla extract. Blend until completely smooth and well combined.
  • Pour the vanilla mixture into the popsicle molds on top of the grape layer. Fill each about 2/3rds of the way up. Place in the freezer (no sticks) for 30 minutes.
  • Add the remaining grape filling on top of the vanilla layer. Place the popsicle sticks in, cover, and place in the freezer overnight and let freeze for at least 24 hours. 
  • Remove the popsicles from the mold when you are ready to enjoy these.
