Honey Chocolate Cake

Servings: 1 cake

Ingredients

Cake

  • 3/4 cup (60 g) cocoa powder
  • 1/2 cup (150 g) honey
  • 1/2 cup (118 ml) boiling water
  • 1 cup (210 g) sugar
  • 1 cup (222 g) butter
  • 2 cups (320 g) all-purpose flour
  • 1 tsp (4 g) baking powder
  • 1 1/2 tsp (9 g) baking soda
  • 1 tsp (3 g) salt
  • 2 eggs
  • 3/4 cup (180 g) sour cream
  • 1 tbsp (15 ml) vanilla extract

Frosting

  • 1 1/2 cup (333 g) butter, room temperature
  • 1/2 cup (114 g) cream cheese, room temperature
  • 1/4 cup (75 g) honey
  • 2 tbsp (50 g) salted caramel
  • 3 cups (420 g) powdered sugar
  • honeycomb (optional)

Instructions

  • Preheat your oven to 350°F. While the oven is warming up, place the cocoa powder and honey in a bowl. Carefully pour the boiling water into the bowl and whisk together until smooth.
  • In another bowl, combine the flour, baking soda, baking powder, and salt.
  • In a stand mixer bowl, cream the butter and sugar together. Add the eggs one at a time. Add the vanilla extract and mix well.
  • Next, add the cocoa powder and honey mixture to the stand mixer and blend.
  • Add half of the flour mixture to the stand mixer and blend. Add the sour cream and blend. Finally add the remainder of flour and mix until just combined.
  • Separate the batter into two separate cake pans (about 650 grams per cake tin). Place in the oven and bake for 25-32 minutes or until done. Once done, place on a cooling rack and allow it to cool completely.
  • To make the frosting, place the butter, cream cheese, honey, and salted caramel in a bowl. Add the confectioners’ sugar 1 cup at a time. Continue to add confectioners’ sugar until you are happy with the flavor and make sure the frosting is thick.
  • To construct your cake, make sure to cut both layers so they are level. Add some frosting to the first layer and if you are using the honeycomb, add it on top of the frosting. Carefully spread additional frosting to slightly cover the honeycomb.
  • Top with the second layer. Frost the cake to match the image from the game.
