Beef Burrito

Ingredients

Cilantro Lime Rice

  • 2 1/4 cup rice
  • 1 cup water*
  • 2 cups chicken stock*
  • 1/4 cup cilantro, chopped
  • 3 limes, zest and juice
  • 1 tsp salt

Beef

  • 2 lbs skirt steak
  • 2 tbsp canola oil
  • 1 tbsp ground cumin
  • 2 tsp garlic powder
  • 2 tbsp chili powder
  • 1 tbsp salt
  • 1/2 tsp black pepper
  • 1 tsp sugar

Per Serving

  • 1 large flour tortilla
  • any additional burrito toppings

Instructions

  • Place the rice, water, and chicken stock in a rice cooker. Follow the instructions on your rice cooker and cook the rice. 
  • Transfer the cooked rice into a non-metal bowl. Mix the salt, cilantro, lime juice, and lime zest with the rice. Set aside and keep warm until you are setting the burritos up.
  • Cut the skirt steak into portions that will fit in a stainless-steel pan. Combine the canola oil, cumin, garlic powder, chili powder, salt, black pepper, and sugar in a bowl. Toss the skirt steak in and mix until it is completely covered in the spices and oil. Set aside and let rest for 15 minutes.
  • Heat a stainless-steel pan, with 2 tablespoons of canola oil, over high heat. Sear the steak to your desired temperature. Transfer to a plate and cover in aluminum foil. Allow the meat to rest for 10 minutes. 
  • Slice the meat against the grain in order to avoid the pieces being chewy. Next, slice those pieces into cubes to resemble the beef in the game.
  • To assemble a burrito, warm a flour tortilla. Add a small portion of rice and then top with the beef. Feel free to add any additional toppings to your burrito to your liking. Wrap it together and enjoy.

Notes

*The liquid total for your rice cooked might be less. Make sure to follow your rice cookers instructions for 2 ΒΌ cups of rice.
