Invigorating Miso Soup
Dashi Stock
- 1 kombu
- 1 cup niboshi head and guts removed
- 4 cups water
- ½ cup bonito flakes
Soup
- ½ lb salmon cut into four thin portions
- 1 tbsp sake
- kosher salt
- 8 oz tofu
- 1 tbsp wakame
- 3 tbsp shiro miso
- 1 scallion sliced
Healthy Omusubi
Sushi Rice
- 3 cups sushi rice
- 1 kombu
- water follow your rice cooker’s directions
- 2 tbsp rice vinegar
- 1 tbsp sugar
- ½ tsp kosher salt
Filling
- 3 oz spinach
- ¾ lb tuna
- kosher salt
- ground black pepper
- 1 scallion chopped
- 6 strips of nori
Turnip and Strawberry Salad
Dressing
- ¼ cup rice vinegar
- ¼ cup honey
- 2 tbsp lemon juice
- ⅓ cup olive oil
