It is that time of year again when all things pumpkin flavored are consumed. Since I’ve known my husband, he has hated all things that are pumpkin flavored. He will give them a try but the end result is the same, he is has no interest in taking another bite. That is until I made these cookies. He devoured several of these and was really sad that he had to share them at a party that evening. Several people came up to me that evening saying how they usually hate cookies but these were really delicious. When looking at the image of these cookies, I spent the most time trying to figure out what the little chunks were in the image. In the end, I decided butterscotch chips and cranberries were a good combination with the pumpkin base. Time for another delicious Don’t Starve recipe! Let’s get baking.
Required Equipment: stand mixer, bowls, baking sheet
Results: About 24 cookies
Ingredients:
2 ½ cups flour
1 cup oats
1 ½ tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ginger
¼ tsp nutmeg
1 eggs
1 cup butter, at room temperature
½ cup brown sugar
1 cup honey
1 cup pumpkin puree
1 tsp vanilla extract
1 cup butterscotch chips
½ cup dried cranberries
Preheat your oven to 350℉. In a bowl combine the flour, oats, baking powder, baking soda, salt, cinnamon, ginger and nutmeg. In the bowl of a stand mixer, mix the butter and brown sugar.
Add the egg and follow that with the pumpkin puree and vanilla extract.
Take half of your dry ingredient bowl and add it to the stand mixer. Once combined add the cup of honey. Add the remainder of the dry ingredients and mix until combined.
Fold in the butterscotch chips and dried cranberries.
Take about a tablespoon of the dough at a time and place it on a greased baking sheet. Place in the oven and bake for 15-20 minutes or until golden brown.

I’m not a big fan of oats in cookies, so can i substitute the oats for another cup of flour?

I will admit I’m not 100% sure on this. I’d try adding 1/2 cup of flour at a time to make sure the dough does not become too thick. Mix all your dry ingredients together (minus the oats and with an additional 1/2 cup of flour). If after adding the second portion of dry ingredients to the dough it seems too thin add some more flour until the dough thickens up.
