Overwatch League: London Spitfire Popsicles

London Spitfire LogoDuring the Overwatch League season, I have turned to my corgi, Kanji, to predict the results of the upcoming matches. For each match, I told him that each of my hands represented a team and then he would give me a paw for his thoughts. His record isn’t 100% but I’d say he could probably compete with the analysts on the desk. One thing I noticed during these sessions is that Kanji is a huge London Spitfire fan. I think 95% of the time he would select them as the winner of the match. The London Spitfire have been on a rampage during the last playoff games. This team has surprised me with how much better they are looking. They have had some rough slumps but when this team is on, they are a scary force. I would never want to be in a game against Profit or Birdring. Their DPS play seems unreal at times.

I’ve always really liked the color scheme of the London Spitfire. The light blue and orange combo is just so aesthetically pleasing. Typically, light blue popsicles are flavored like bubblegum, but that was not a direction I wanted to take these because I’m not a huge fan of that flavor. This is one of the reasons the Spitfire popsicles have taken me awhile to come up with. On my trip to Canada, we stopped at an ice cream shop and I was surprised to see light blue ice cream that was flavored as birthday cake (they also had a bubble gum one). From that moment, I knew that was the correct answer for these popsicles. The base concept for these is a vanilla birthday cake. When I bake vanilla cake, I’ve fallen in love with adding cardamom to the mix. This spice adds such a wonderful taste to a birthday cake that it is a must use ingredient for me. Of course, the most important ingredient on any birthday cake is sprinkles! So don’t forget to top each of these popsicles with some white, orange, and light blue sprinkles.

Ingredients:
Popsicle
1 cup heavy cream
1 ½ cups plain greek yogurt
2 tbsp vanilla extract
⅔ cup sugar
¾ tsp cardamom
neon blue food dye

Dark Chocolate Drizzle
½ cup dark chocolate chips
1 tbsp coconut oil

white, orange, and light blue sprinkles

Combine the heavy cream, yogurt, vanilla extract, sugar, and cardamom in a blender. Blend until completely smooth and well combined. Add a few drops of neon blue food dye and mix well. Add enough dye to match the Spitfire blue.

Transfer the mixture into your popsicle molds. Place the popsicle sticks in, cover, and place in the freezer overnight (at least 12 hours).

The next day, place the chocolate in a bowl and add the coconut oil. Place in the microwave and heat up until the chocolate melts. Set aside and allow to slightly cool.

Set a plate with parchment paper on the side. Remove the popsicles from their molds. Take the popsicles and drizzle the chocolate on them. Quickly add the sprinkles, the chocolate should solidify pretty quickly.

Once set, place on the plate with parchment paper. Enjoy immediately or wrap each popsicle in plastic to store in the freezer to enjoy later.

Ingredients

Popsicle
