Last month, Nintendo released an update for Animal Crossing New Horizons that introduced more seeds for farming as well as actual cooking. You can now walk up to a kitchen stove and begin creating delicious dishes. The recipes in the game are quite simple, most requiring only a few items to put together. The hard part is actually collecting all the different recipes over time. Gathering recipes has always been a bit tedious in Animal Crossing but if you are patient and play often, I’m sure you’ll get all the recipes before I do. I’ve been loving this update and have been enjoying my time back on the island. Here is hoping I can get my hands on all the delicious looking recipes.
One of the first recipes revealed in the trailer was this delicious bowl of minestrone soup. In game, all you need to gather are some tomatoes, a potato, and carrot to enjoy this hearty soup. Right away, I got to work on this recipe. I hadn’t had a minestrone soup with potatoes before, but including it in this recipe made for a very filling bowl of soup. This recipe is extremely easy to put together but will require a bit of cooking time. You will end up with a lot of leftovers with this recipe and it reheats extremely well.

3 celery stalks, chopped
1 tbsp parsley, chopped
1 tbsp dried basil
2 tbsp dried oregano
1 tsp dried thyme
1 tsp sugar
28 oz diced tomatoes
4 cups vegetable stock
2 bay leaves
2 russet potato, chopped
½ cup small pasta
15 oz canned kidney beans
15 oz canned cannellini beans
chopped chives, garnish
Place a large pot over medium-low heat. Add the onions and sauté until they become translucent, about 5 minutes. Season with salt and pepper. Add the celery and carrots. Cook for about 7 minutes, until the carrots have softened slightly.
Add the parsley, basil, oregano, thyme, and sugar to the pot. Mix the spices with the vegetables. Once combined, add the diced tomatoes and mix together. Finally, add the vegetable stock and stir together. Lower the heat to low and cover. Allow simmer for 1 ½ hours.
After the soup has cooked for the required time, increase the heat to medium. Add the potatoes, and beans and allow it to cook for 20 minutes or until the potatoes are slightly soft. Add the pasta and cook for 15 minutes, or until the pasta is cooked. Serve immediately and top with freshly chopped chives.
