Animal Crossing: New Horizons is my ultimate chill out game. I’ll just turn the game on and zone out of all the tasks I had going on that day. I’ll hop around different islands, collect random resources, work on farming up some vegetables, or just spend a long time fishing. Fishing is one of my favorite ways to completely relax while playing a game. Sitting there and waiting for your next catch just zens me out. It has been a few months since I’ve touched my island and I imagine many of my island dwellers are probably wondering where I may have run off to. I really should pay them a visit again.
Often I find myself making breakfast daily but some weeks I would much rather prepare something ahead of time to enjoy throughout the week. Scones do an amazing job at covering a few days of breakfast. I have always been a big fan of carrot baked goods and the moment I saw carrot scones in Animal Crossing I knew I would be making a batch of these. These can be enjoyed as is but if you want to take the scones to the next level, you will want to add the cream cheese glaze. Carrot desserts and cream cheese are a perfect match. Just writing about this really has me wanting a batch of these. Good thing I typically have carrots and cream cheese in the fridge.
Carrot Scones
2 ¾ cups all-purpose flour
1 tbsp baking powder
1 tsp kosher salt
1 ½ tsp ground cinnamon
1 tsp ground ginger
1 tsp turmeric
pinch of ground nutmeg
⅓ cup sugar
¼ cup light brown sugar
1 cup shredded carrots
½ cup unsalted butter, cubed and frozen
¾ cup buttermilk
Cream Cheese Glaze
3 oz cream cheese
1 cup confectioners’ sugar
pinch of salt
2 tbsp unsalted butter, melted
2 – 3 tbsp milk
Combine the flour, baking powder, salt, cinnamon, ginger, turmeric, nutmeg, sugar, light brown sugar, and carrots in a large bowl. Combine the butter with the flour until it resembles a coarse meal.
Add the buttermilk and mix together until just combined (do not overwork). Transfer the dough onto the countertop and form into an 8 inch wide disc. Cut into 8 portions. Prepare a baking sheet with parchment paper.
While the scones are baking, mix together the cream cheese glaze. Place the cream cheese, confectioner sugar, and salt in a bowl. Pour the melted butter in the bowl and mix. Add the milk as you mix the other ingredients. Make sure the glaze is thick and not too runny.
Place the scones on the baking sheet. Transfer to the freezer and let rest for 15 minutes. Preheat an oven to 375°F. Bake for 25 to 30 minutes or until golden brown. Allow to cool completely before adding the cream cheese glaze on top.
