Spiritfarer was one of Jeff and my favorite co-op couch experiences recently. We worked hard together and split up the different tasks needed in order to help our ship crew have a successful journey. One of the tasks we made sure to work hard on was helping with Susan’s Museum. Susan is a collector and had us go around collecting all the unique items in the game. I loved completing this because this gave us the chance to see all the recipes in the game. Sure, Susan may have looked down on us in the beginning. But I’d say she was just a little proud of us for finishing up her collection.
There are so many dishes to choose from that it is always so hard to pick which one to make next. I ended up inspired by this maple salmon recipe. I love the sweet flavor of maple which is why this recipe caught my attention. It was very important to make sure that the maple was in both the salmon part and the green beans, which the salmon sits on top. This recipe is great for people who might not really be into fish because the marinade covers up any overly fishy flavors.
Salmon
1 lb (454 g) salmon, skin on and cut into 4 portions
¾ cup (225 g) maple syrup
3 tbsp (45 ml) soy sauce
¼ cup (59 ml) mirin
2 tbsp (30 ml) sake
4 garlic cloves, minced
1 inch piece of ginger, grated
Green Beans
1 ½ lb (680 g) green beans
15 garlic cloves, minced
2 tbsp olive oil
1 tbsp maple syrup
salt
pepper
Combine the maple syrup, soy sauce, mirin, sake, garlic, and ginger in a bowl. Add the salmon and let rest in the refrigerator for at least 2 hours, up to 8 hours.
Preheat your oven to 400°F. Prepare a baking tray with aluminum foil and nonstick spray. Place the salmon on a baking sheet and bake for 16 to 18 minutes.
Place the green beans and garlic in a bowl and toss to coat with olive oil and maple syrup. Prepare a baking tray with aluminum foil and parchment paper. Place the green beans on the baking sheet. Season with salt and pepper. This can be baked at the same time as the salmon for 16 to 18 minutes, or until tender.
