I finally reached the end of the Overwatch League themed popsicles project! Sure, next season will add a few more teams but for now we wrap up the project with the Boston Uprising. This was a team that at the start of the season was thought to be a bottom tier team. They proved the analysts extremely wrong. They are the only team to have completed a stage with no losses. I was extremely impressed that they were able to surpass many (my own included) expectations and even make it to the season 1 playoffs. My husband was kind of excited about the end result of those specific finals but he was mostly reminded of this past year’s Super Bowl. I hope the best for all these players and I’m excited to see what they have in store for next season.
I struggled with designing these popsicles for a while. With so many blue colored teams, I didn’t want to make another blue based popsicle. I went with the Boston Uprising’s yellow as the base for the popsicle. I combined pineapple, mango, and coconut milk to make for a nice tropical popsicle. To highlight the blue, I decide to pick up some blue candy melts. These are a bit sweeter than just using chocolate but I found it was an easier option for getting the correct color. I wish I used these chocolate melts on a few other popsicles but now I know their power. These popsicles have been extremely refreshing during this hot summer.
Ingredients:
Popsicles (8)
1 cup pineapple chunks
½ cup mango
¼ cup sugar
2 cups coconut milk
10 drops of yellow food dye
1 cup blue candy melts
2 tbsp coconut oil
Place the pineapple and mango in a blender and blend until smooth. Add the coconut milk and sugar. Blend until completely smooth and well combined. Add the food dye and mix well.
Transfer the mixture into your popsicle molds. Place the popsicle sticks in, cover, and place in the freezer overnight (at least 12 hours).
The next day, place the blue chocolate melts in a bowl and add the coconut oil. Place in the microwave and heat up until the chocolate melts. Set aside and allow to slightly cool.
Set a plate with parchment paper on the side. Remove the popsicles from their mold. Take the popsicles and drizzle the chocolate on them.
Once set, place on the plate with parchment paper. Enjoy immediately or wrap each popsicle in plastic to store in the freezer to enjoy later.
