Overcooked 2: Beef Burrito
These past few weeks, I have been playing Overcooked 2. I am currently a little over halfway through the main campaign and can’t get enough of this game. Overcooked 2 truly shines while playing with friends. Each level, we will start off by exploring the layout of the land and figuring out the tasks for each player. The most important role is the person calling out the orders and setting the pace of the level. If one person starts working too early on things, your other team members will become confused. All of a sudden, you have shrimp flying all over the kitchen and everyone yelling over each other! The slow and steady team will get those orders out on time! Just don’t work too slowly because the customers will get angry and leave.

There are several recipes that you cook during your journey to stop the unbread. One of my favorites is the burrito. The combination of spiced beef and seasoned rice is just true perfection. I laughed a little when I saw the burrito in game is never rolled up, but it’s important to see what ingredients are in it. I’m sure the servers handle that part off-screen. With this recipe, I came up with the rice and beef recipe. From there, you can dress your burrito to your liking. My personal favorite additions are guacamole, pico, and queso.

Cilantro Lime Rice
2 ¼ cups rice
1 cup water *
2 cups chicken stock *
¼ cup cilantro, chopped
3 limes, zest and juice
1 tsp salt

*Note: The liquid total for your rice cooked might be less. Make sure to follow your rice cookers instructions for 2 ¼ cups of rice.

Beef
2 lbs skirt steak
2 tbsp canola oil
1 tbsp ground cumin
2 tsp garlic powder
2 tbsp chili powder
1 tbsp salt
½ tsp black pepper
1 tsp sugar

Per Serving
1 large flour tortilla
any additional burrito toppings


Place the rice, water, and chicken stock in a rice cooker. Follow the instructions on your rice cooker and cook the rice.

Transfer the cooked rice into a non-metal bowl. Mix the salt, cilantro, lime juice, and lime zest with the rice. Set aside and keep warm until you are setting the burritos up.

Cut the skirt steak into portions that will fit in a stainless-steel pan. Combine the canola oil, cumin, garlic powder, chili powder, salt, black pepper, and sugar in a bowl. Toss the skirt steak in and mix until it is completely covered in the spices and oil. Set aside and let rest for 15 minutes.

Heat a stainless-steel pan, with 2 tablespoons of canola oil, over high heat. Sear the steak to your desired temperature. Transfer to a plate and cover in aluminum foil. Allow the meat to rest for 10 minutes.

Slice the meat against the grain in order to avoid the pieces being chewy. Next, slice those pieces into cubes to resemble the beef in the game.

To assemble a burrito, warm a flour tortilla. Add a small portion of rice and then top with the beef. Feel free to add any additional toppings to your burrito to your liking. Wrap it together and enjoy.
