This past weekend, my husband and I got all caught up on the latest chapters of Guild Wars 2’s Living Story. As usual, I will not be posting any spoilers about the main story. I really enjoyed the pacing and story in chapter 3. Throughout the chapter, I felt like my character was actually taking command of the situation. My character was pushing forward and trying to get the job done all while keeping the people of Tyria in mind. During our time on this chapter, my husband and I began working towards unlocking the extra mount. We are currently on the last collection to unlock the adorable little guy. I love that little mount and can’t wait until I unlock it.
Raspberry is a fruit that I can just munch on forever and be a happy camper. It is a great snack while exploring the world of Tyria. Chocolate and raspberry is one of my all time favorite flavor combinations. If a menu has a dessert with this combination, it is an instant order for me. Guild Wars 2 offers several desserts with this combination and I know I will be making a few of these over time. This week, I am taking a look at the chocolate raspberry cookies.These cookies take the delicious flavor of raspberries and infuses it into a double chocolate chip cookie. I love these and ate way more than I should have. My recommendation with these is to make sure you have a few friends to share these with to make sure you don’t eat the whole batch.
Ingredients:
8 oz fresh raspberry
2 tsp vanilla extract
3 cups all-purpose flour
½ cup dark chocolate powder
1 tsp baking powder
½ tsp baking soda
1 tsp salt
1 tsp cardamom
1 cup butter, room temperature
¾ cup sugar
½ cup brown sugar
2 eggs, room temperature
10 oz dark chocolate chips
Place the raspberries in a blender and puree them. Pour the pureed raspberries through a mesh strainer to remove the seeds. Mix in the vanilla extract and set aside.
Preheat an oven to 350°F. In a small bowl, combine the flour, dark chocolate, baking powder, baking soda, salt, and cardamom. Set that aside. In another bowl, place the butter and mix until smooth.
Add the sugars to the butter and mix until smooth. Add one egg at a time to the mixture.
Add the raspberry vanilla mixture and mix until just combined.
Slowly mix in the flour mixture until it just comes together. Add the chocolate chips and fold them in.
Take about a tablespoon of the dough at a time, place on a baking sheet and press each down into a cookie shape. Place in the oven to bake for 14-16 minutes.
