The Overwatch League season 2 starts this evening and I am very excited to start watching the pros play on stage. The off-season was long but we are back at it again! This year there are eight new teams and many new players. The moment the Hangzhou Spark announced their team colors and logo, I fell in love. Then they announced that Guxue was going to be on the team and now I’m fully in! I was lucky to go to Blizzcon last year and watch the Overwatch World Cup live. It was there that I learned about Guxue and saw what an amazing Winston player he is. Once team USA got knocked out, I was cheering for China the whole time. I can’t wait to see him back on stage and to watch how the Hangzhou Spark perform throughout the season.
I know many of you have been patiently waiting for the new team popsicles. This next batch will probably be a bit slower and happening throughout the season. Last year, when I was making these, I had so many popsicles in the freezer I might have mentally burnt out on them. This year, to avoid that I will be focusing on a few of my favorite teams a bit more and making other treats to show my love for the Overwatch League. For my first popsicle of the new season, we are giving these a bit of a spark. I decided to go with a pink lemonade flavored popsicle. Where does the spark come in? Well that is with the use of citric acid. Citric acid is a wonderful way to make food have a sour punch to them. If you aren’t looking for something too sour, feel free to leave the citric acid out but I think it really ties the popsicle together.
Ingredients:
Pink Lemonade Popsicle
8 ounces strawberries
3 lemons, zested and juiced (about ⅔ cup/ 150 ml)
1 cup (250 ml) greek yogurt
1 cup (250 ml) heavy cream
1 tsp (5 ml) vanilla extract
⅓ cup (75 g) sugar
¾ tsp (3.75 ml) citric acid
White Chocolate
1 cup white chocolate chips
2 tbsp coconut oil
blue sprinkles
pink sprinkles
Combine the strawberry, lemon zest and juice, greek yogurt, heavy cream, vanilla extract, sugar, and citric acid in a blender. Blend until completely smooth and well combined.
Transfer the mixture into your popsicle mold. Place the popsicle sticks in, cover, and place in the freezer overnight (at least 12 hours).
The next day, place the white chocolate and coconut oil in a bowl. Place in the microwave and heat up until it melts. Make sure to stir everything together. Transfer to a tall cup (one that is wide enough to fit the popsicles in) and allow to slightly cool.
Set a plate with parchment paper on the side. Remove a popsicle from its mold. Dip the popsicle into the melted white chocolate. Sprinkle some blue and pink sprinkles before the chocolate completely solidifies.
Once the chocolate sets, place on the plate with parchment paper. Enjoy immediately or place each popsicle in a plastic ziplock to store in the freezer to enjoy later.
